The SKYLARK DINER
Established in 1956, the Skylark Diner is one of the oldest, continuously open restaurants in the Southern Tier. It was one of 4 restaurants opened by Orval Stevens in the area. The Skylark was a custom ordered, prebuilt diner car, manufactured in NJ and shipped to Vestal by train. The Diner came equipped with all of its furnishings, equipment, and fixtures, many of which are still present to this day. In the early 1960’s, the Skylark underwent a major renovation and although no longer visible, the original dining car building still exists under the roof. Orval Stevens continued operating the Skylark until 1970 when his son and daughter-in-law Walter and Nancy Stevens then took over ownership duties. These duties were then passed on to their son Gregory and his wife Christina where they continue to be a place in the community where strangers become friends, friends become family, and fine foods and friendly atmosphere prevail.
